Souvlaki is the Greek version of kebabs usually made from meat or fish. You can make a souvlaki both indoors and outdoors since the method is same, all you need is the ingredients and some hot coals. These are great to toss on the griller.
To begin with gather all the ingredients on the shelf.
- Pork pieces with fat trimmed, cut into cube pieces
- Lemon juice
- Grated onions
- Grated garlic cloves
- Olive oil
The first step after gathering all the ingredients is to marinate the pork. In a big bowl add grated onions, garlic cloves, salt, pepper, lemon juice, oregano and a bit of olive oil and mix well. Add this mix in a zip-lock bag with pork pieces. Massage and mix well, so the pork is marinated from all sides. Squeeze out all the extra air from the bag and seal it closed. Refrigerate it for at least two-foat least. Make a note that you don’t marinate the pork for more than four or six hours or else the acid in the lemon will grow. But if you wish to marinate them over a night, you can skip the lemon part then.
While the pork is left in the refrigerator, the second step is to prepare the grill for cooking on medium heat. Initially, let it go for high heat and with 10-15 minutes slow it down to medium heat. While the grill is preheating, take the pork out of the refrigerator half and hour before and remove all the extra marinate before starting to grill.
Put the pork on the skewers. Once the grill is ready, put the skewers on the grill and let them grill for about 4 minutes or until golden-brown. Keep turning them pork skewers until all the four sides are grilled to perfection. See that they have a charred layer on the outside while they are still tender inside. When done, remember not to over grill them, remove them to a platter and allow to rest for about 5-7 minutes so the juices are distributed evenly across all the pieces. Then serve with salads and pita bread. Warm the pitas on a burner for not more than a minute. Or you put them on the griller as well and grill them till they are slightly brown. Also with the pork only you can add vegetables to get grilled too. Interestingly, you can serve it as a pita pocket by adding the souvlaki and salad in a pita bread and wrap it around. Grated cheese can be added in that to garnish the dish. Tzatziki, a traditional sauce made from cucumbers, yogurt, garlic and lemon juice is also added to complete the dish. To make the sauce, peel off a cucumber in a bowl and grate it. In it add some Greek yogurt, olive oil, garlic and lemon juice. Stir it continuously until its combined. Now refrigerate it for at least two hours.
Need not to worry if you don’t have an indoor grill, you can always use the gas stove with a frying pan and an iron griddle which can be set on the top of the pan like a lid. The result for the both are absolutely satisfying and worth making. A perfect recipe to try your hands on. And grilling them gives an all new experience to it. This can surely turn into one of your favourite summer time dishes.
