Now the first step, to begin with, is to put the mushrooms on a dish with a shallow base and with the smooth side up. Then in a bowl combine oil, salt, basil, oregano, vinegar, garlic and pepper and whisk together. Pour the entire mix on the mushrooms and let them rest for about 15-20 minutes, so the mushrooms are coated well turning them one or two times. While keeping the mushrooms aside, pre heat your griller to medium heat. Brush the griller with oil and then place the mushrooms for grilling while reserving the extra or left over marinate for basting. Keep them turning over and over again for 6-7 minutes, brushing casually with the marinate on both sides and till the time they are cooked perfectly well and are tender. Now add on cheese during the last 2-3 minutes. While this is happening grill the onions for not more than a minute and also the buns until they are crispy and toasted. To finish the dish, place the spinach (if you like), and grilled portobello mushrooms on the buns and top with grilled onions and sliced tomatoes along with avocado too. If you wish to add up any sauce on the buns, you can use tomato ketchup or even mayonnaise. Also red or yellow bell peppers can be addeD in too. This can surely make an amazing dish for your evening snack or even for entrees.
